Makes 4 naan
Time 2-3 hours, mostly rising

Ingredients#

  • 1 1/4 cups all-purpose flour (about 150g), plus more as needed
  • 1/2 tsp instant yeast
  • 1/4 tsp sugar
  • 1/4 tsp salt
  • 1/8 tsp baking powder
  • 1/3 cup cottage cheese, blended smooth (about 75g)
  • 3 tbsp warm water (45ml), plus more as needed
  • 2 tsp oil (10ml)
  • 1 1/2 tbsp butter or ghee, melted, for brushing
  • 2 garlic cloves, minced
  • 2 tbsp chives, finely chopped

Directions#

Step 1 - Blend the Cottage Cheese#

Blend the cottage cheese until completely smooth, with no lumps.

Step 2 - Mix the Dough#

Mix the flour, yeast, sugar, salt, and baking powder in a bowl. Add the blended cottage cheese, oil, and warm water. Stir, then knead for 5-7 minutes into a soft, slightly tacky dough. Add a little flour or water as needed to adjust the texture.

Step 3 - Let the Dough Rise#

Cover the dough and let it rise for 1-2 hours, until roughly doubled.

Step 4 - Divide and Rest#

Punch down the dough and divide it into 4 balls. Cover and rest for 10 minutes.

Step 5 - Shape and Add the Garlic#

Roll each ball into an oval about 1/4 inch thick. Press some minced garlic and chives into the surface of each oval, then gently roll once more so they stick.

Step 6 - Cook the Naan#

Heat a cast iron skillet or heavy pan over medium-high heat without oil. Cook one naan at a time, garlic side down first. Once bubbles form and the bottom is browned in spots, about 1-2 minutes, flip and cook the other side for 1-2 minutes.

Step 7 - Brush with Butter#

Brush each naan with melted butter or ghee as soon as it comes off the pan.
