Gojuchang Sourdough#

Makes 1 loaf
Ingredients#
- 113 g fed, active sourdough starter
- 340 g water
- 567 g bread flour
- 15 g salt
- 60 g gojuchang
Directions#
Start this in the evening of Day 1. Bake in the morning of Day 2.
Step 1 - Mix#
Mix starter with water, salt, and gojuchang. Then mix in flour. Mix well.
Step 2 - Fold and Stretch#
Fold and stretch the dough on all 4 sides. Repeat this process 4 times, every 30 minutes for the first 2 hours.
Step 3 - Bulk Ferment#
Let bulk ferment for 12 hours overnight.
Step 4 - Preheat Oven (Day 2)#
Preheat oven to 450°F with Dutch oven inside.
Step 5 - Bake#
Shape loaf and place in Dutch oven, covered. Bake for 25 minutes at 450°F covered. Remove lid and continue baking for 20 minutes.
