Reddit Sourdough#

Makes 1 loaf
Ingredients#
- 113 g fed, active sourdough starter
- 340 g water
- 567 g bread flour
- 15 g salt
Directions#
Start this in the evening of Day 1. Bake in the morning of Day 2.
Step 1 - Mix#
Mix starter with water and salt. Then mix in flour. I use the stand mixer with the dough hook and mix on low for about 3 minutes.
Step 2 - Fold and Stretch#
Fold and stretch the dough on all 4 sides. Repeat this process 4 times, every 30 minutes for the first 2 hours. If you only have time for 2 folds that’s ok.
Step 3 - Bulk Ferment#
Let bulk ferment for 12 hours overnight.
Step 4 - Preheat Oven (Day 2)#
Preheat oven to 450°F with Dutch oven inside. Target to have the Dutch oven heat up for 30 minutes.
Step 5 - Shape#
While the oven is heating, shape the dough. My current preference is to shape into a batard, a soft oval. This rises mroe predictably than the boule (circle) and can be cut more like sandwich bread.
Step 6 - Bake#
Score loaf then place in Dutch oven, covered. Bake for 20 minutes at 450°F covered. Remove lid and turn down temperature to 400°F for 25 minutes.
Note: if you keep the temperature high you will get a dark, harder crust which may be preferred.
