Ingredients#

  • 227g active sourdough starter
  • 120g all-purpose flour
  • 6g salt (1 tsp)
  • 28g butter, melted (1 tbsp = 14 g)
  • 60g milk
  • 12g sugar
  • 1g baking soda
  • Semolina flour or cornmeal for dusting

Directions#

Step 1 - Make Dough#

Mix starter + flour + salt + butter + milk + sugar until sticky and soft, slightly tacky. No need to knead.

Step 2 - Rise#

Cover and let rise somewhere warm until puffed and possibly bubbly, about 1.5 hours.

Step 3 - Add Baking Soda#

Gently fold in baking soda.

Step 4 - Shape#

Turn out onto cornmeal-dusted surface. Pat to 3/4" thick. Cut into desired shapes.

Step 5 - Cook#

  • Cook Cook on griddle at medium-low heat, 7-8 minutes per side until golden.
