Sourdough English Muffins#
Makes ~8 muffins
Ingredients#
- 227g active sourdough starter
- 120g all-purpose flour
- 6g salt (1 tsp)
- 28g butter, melted (1 tbsp = 14 g)
- 60g milk
- 12g sugar
- 1g baking soda
- Semolina flour or cornmeal for dusting
Directions#
Step 1 - Make Dough#
Mix starter + flour + salt + butter + milk + sugar until sticky and soft, slightly tacky. No need to knead.
Step 2 - Rise#
Cover and let rise somewhere warm until puffed and possibly bubbly, about 1.5 hours.
Step 3 - Add Baking Soda#
Gently fold in baking soda.
Step 4 - Shape#
Turn out onto cornmeal-dusted surface. Pat to 3/4" thick. Cut into desired shapes.
Step 5 - Cook#
- Cook Cook on griddle at medium-low heat, 7-8 minutes per side until golden.
