Makes 8 tortillas, 6 inch diameter

Ingredients#

  • 2 cups flour + more as needed
  • 5/6 cup warm water
  • 1/8 cup canola oil (or any fat: butter, lard, other oils)
  • 1 tsp salt

Directions#

Step 1 - Mix#

Mix together. The consistency should be tacky to smooth.

Step 2 - Rest#

Let sit for 5 - 10 minutes.

Step 3 - Divide#

Prep cutting board with about 3 tbsp of flour, to use for ensuring rolled out dough doesn’t stick. Take dough and divide into 8ths, roll into balls.

Step 4 - Roll Out#

Sprinkle flour in the middle, take first ball, use palm to press out dough into a disk. You can pick up and slightly stretch; this helps the rolling process. Use rolling pin to finish rolling out. Should be about 6 inches in diameter and about 1/8 inch thick or thinner. Don’t get too thin where you can see through dough.

Step 5 - Cook#

(Usually do in parallel with Step 4)

Heat a cast iron on medium heat. Once hot, add 1 raw tortilla. Flip after about 45 seconds, when you can see bubbles forming. Cook for another ~25 seconds.
